I’ve been actively working on my health, getting fit and dropping a few of my remaining COVID belly inches. One of my favorite new recipes has been these muffins.
Protein Rich Berry Muffins (Makes 8)
Preheat Oven to 350 degrees and grease muffin tin
Mix Dry Ingredients together in medium bowl:
3/4 C Almond Flour
3/4 C Vegan Vanilla Protein Power (I use Orgeans)
1 tsp baking powder
Mix wet ingredients together in blender
1 egg
1/2 C unsweetened almond or cashew milk
1 tsp vanilla extract
1 mashed ripe banana
1 T maple syrup
Add wet ingredients to dry and mix well. Add 1/2 C berries (blueberries or chopped strawberries work well)
Divide into 8 muffin cups. Bake 25 minutes until lightly browned. Approximately 150 calories per muffin and less than 7 g sugar each.
